Unlike foil, butcher paper is breathable, which means moisture can escape and your bark stays firm and textured rather than going soft and steamed. The result is a better crust, juicier meat, and that authentic BBQ finish that separates a great cook from a good one. At 22.9 metres, this roll gives you plenty to work with across multiple cooks.

How to Use
Wrap your brisket or pork shoulder tightly in butcher paper once it hits the stall (typically around 65–70°C internal temperature). Return to the smoker and continue cooking until your target internal temperature is reached. The paper allows the cook to push through the stall faster while keeping the bark intact — the best of both worlds.
